Meat Loaf

While not the most glamorous of dishes, Grandma Lockhart always seemed to make it taste like something special. Her recipe was very simple but always delicious.

I don't think she ever had a "specific" recipe as few women of that era ever did, she just cooked according to need. Therefore, the following amounts should be adjusted to your family's needs.

Surnames: Lockhart, Jones, Truax

About 3-4 lbs of ground beef

1-2 eggs, depending on size and need for moisture in loaf

saltine crackers

onions, chopped (to taste)

Salt and Pepper to taste

 

Combine all ingredients in a large bowl, using eggs and crackers as needed to form a uniform mix to mold well and hold together.

Place in a 9x13 pan and bake at 375 for about 2 hours or until done.
